Ingredients
- 200g jasmine rice, dry
- 600g skinless, boneless chicken thigh
- 400g broccoli
- 15ml reduced-salt soy sauce
- Salt & pepper

Teriyaki Sauce
- 60ml reduced-salt soy sauce
- 40g honey
- 15ml rice vinegar
- 10g fresh ginger
- 10g garlic
- 10g cornflour
- 60ml water
Directions
- Rinse the rice under cold water and cook according to packet instructions.
- Season the chicken thighs with salt, pepper and 15ml soy sauce. Set aside to marinate.
- Cut the broccoli into florets, finely grate the ginger and mince the garlic.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, cornflour and water until smooth.
- Heat a large non-stick frying pan over medium-high heat and lightly spray with oil. Cook the chicken thighs for 5–7 minutes per side, or until golden and cooked through.
- While the chicken is cooking, steam or boil the broccoli for 3–5 minutes, or until tender.
- Pour the teriyaki sauce over the cooked chicken and cook for another 2–3 minutes, turning regularly, until the sauce thickens and evenly coats the chicken.
- Remove the chicken from the pan and slice into bite-sized pieces.
- Divide 150g cooked jasmine rice per serve, the teriyaki chicken and broccoli evenly between four bowls or meal prep containers. Spoon over any remaining teriyaki sauce, garnish with sesame seeds and enjoy.

- 800g sweet potato
- Salt & pepper

Directions
- Preheat the oven to 200°C fan-forced.

Directions
- Preheat the oven to 200°C fan-forced. Rinse the quinoa and cook according to packet instructions.
- Place the thawed basa fillets onto a lined baking tray and season with salt and pepper.
- Mix the harissa paste, honey and smoked paprika together. Spoon evenly over the basa fillets.
- Bake for 15–20 minutes, or until the fish is cooked through and flakes easily with a fork.

- Dice the capsicum and onion. Drain and rinse the black beans.
- Heat a large non-stick frying pan over medium-high heat and lightly spray with oil. Add the beef mince and cook for 5–6 minutes, breaking it apart as it cooks.
- Add the capsicum and onion and cook for another 3–4 minutes, until softened.
- Add the black beans, taco seasoning and a small splash of water. Cook for another 2–3 minutes, stirring until everything is well combined and there is no excess liquid. Remove from the heat and allow the filling to cool slightly.

- 40g water

Directions
- Finely shred the cabbage, julienne or grate the carrot, thinly slice the red onion and roughly chop the Vietnamese mint and coriander.
- Add the cabbage, carrot, red onion, herbs and shredded chicken to a large bowl and toss to combine.
- Finely chop the chilli, then mix with the fish sauce, lime juice, water, sugar and garlic until the sugar has dissolved.
- Divide the chicken salad evenly between four containers and store the dressing separately.
- When ready to eat, pour over the dressing, toss to combine and enjoy.
Alternatively: If using raw chicken breast, poach 600g chicken breast for 12–15 minutes, or until cooked through. Allow to cool, then shred.
Kimchi Pork & Tofu Soup

Ingredients
- 500g lean pork loin
- 500g kimchi
- 1L low-sodium chicken stock
- 300g silken tofu
- 1 medium brown onion
- 4 cloves garlic
- 2 tbsp gochujang
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 1 tsp sesame oil
- ½ tsp MSG (optional)
- 3 spring onions
Directions
- Thinly slice the pork loin and onion, mince the garlic, and finely slice the spring onions.
- Heat the sesame oil in a large pot over medium-high heat. Add the pork and cook until lightly browned.
- Add the onion and garlic and cook for another 2 minutes, or until slightly softened.
- Add the kimchi, gochujang and MSG, if using. Stir and cook for 3–5 minutes.
- Pour in the chicken stock, soy sauce and fish sauce. Stir to combine and bring to a gentle boil.
- Reduce the heat and simmer for 20 minutes.
- Cut the silken tofu into bite-sized cubes and gently add to the soup. Simmer for another 5 minutes.
- Divide between bowls, top with sliced spring onion and serve.
Chicken & Corn Soup

Ingredients
- 500g chicken breast
- 1 clove garlic
- ½ tbsp fresh ginger
- 500ml chicken stock
- 1 can creamed corn
- 1 can water
- 1 whole egg
- 2 egg whites
- ½ tbsp fish sauce
- ½ tbsp soy sauce
- ½ tsp sesame oil
- ½ tsp white pepper
- 1½ tbsp cornstarch
- 2½ tbsp water
- Salt, to taste
- Spring onion, to garnish
Directions
- Finely dice the chicken breast and season lightly with salt. Mince the garlic and grate the ginger.
- Add the chicken stock, creamed corn, 1 can of water, soy sauce, fish sauce, sesame oil, garlic and ginger to a large pot. Stir to combine and bring to a gentle boil.
- Add the chicken, reduce to a simmer and cook for around 10 minutes, or until cooked through.
- Mix the cornstarch with 2½ tbsp water until smooth. Slowly pour into the soup while stirring, then simmer until slightly thickened.
- Whisk the whole egg and egg whites together. Slowly drizzle into the soup while gently stirring to create egg ribbons.
- Stir through the white pepper and season with additional salt if needed.
- Divide between 4 bowls, top with sliced spring onion and serve.
Miso Soup

- 1L water

- 2 tbsp white miso paste
- 300g silken tofu
- 2 tbsp dried wakame seaweed
- 2 spring onions

- Bring the water to a gentle simmer, then stir in the dashi powder until dissolved.
- Add the dried wakame and cook for 1–2 minutes, or until rehydrated.
- Meanwhile, cut the silken tofu into bite-sized cubes and finely slice the spring onions.
- Reduce the heat to low. Add the miso paste to a small bowl with a ladle of hot broth and whisk until smooth, then stir back into the soup.
- Gently add the tofu and heat for 2–3 minutes without bringing the soup to a boil.
- Divide between bowls, top with the sliced spring onions and serve.

- Add all the dumpling ingredients to a large bowl and mix until well combined. Set aside.
- Bring the chicken stock to a gentle simmer, then stir in the soy sauce and fish sauce.
- Thinly slice the cabbage, add to the broth and cook for 3–5 minutes, or until slightly softened.
- Add the miso paste to a small bowl with a ladle of hot broth and whisk until smooth. Stir back into the soup.
- Using two teaspoons, drop small spoonfuls of the pork mixture into the simmering broth.
- Cook for 5–7 minutes, or until the pork dumplings are cooked through.
- Divide between 4 bowls, top with extra sliced spring onion and serve.
